Cars with 1.6L engine that I could think of:
Hyundai Elantra
Kia Soul
Hyundai Accent
Ford Fiesta
Suzuki SX4
Mazda 2
Toyota Altis
Mini
Hyundai i30
Chevrolet Aveo
BMW 116i
Personally, I like the Ford Fiesta, Toyota Altis and Hyundai Elantra.

Corolla Altis for sure. I also like the Aveo and the BMW 116i but considering general aspects the Corolla has a well-balanced setup and can meet nearly all the requirements of a customer in the 1.6L range.

Better if you state the size and type of car you need and your budget instead of simply saying: "1.6"
There are 1.5 liter cars that are more practical and bigger inside than some 1.6 liter cars, and there are 1.8 liter cars that are more economical than some 1.6 liter cars.
Of Macky's list:
Hyundai Elantra - modern, sophisticated. Good power from the 1.6... not quite sure about economy.
Kia Soul - I like this car in some ways, not in others. Certainly a looker.
Hyundai Accent - 4AT only... better to go for the 1.4 liter version instead if you want economy. Otherwise, well-loaded, powerful. Suspension a bit too soft.
Ford Fiesta - Drives great. Powershift a bit indecisive, but fuel economy is good for the engine size. Very refined.
Suzuki SX4 - Not as good as the Soul. Lots of space, though, and drives nicely.
Mazda 2 - 1.5 liter only. But incredible to drive, and thanks to the tight gearing of the 4AT and the light weight, it's more responsive than the Fiesta and Accent.
Toyota Altis - Great car. Lots of space. Great fuel economy for a 1.6 AT.
Mini -...terrific car...
though I feel that the 6AT and 1.6 are a bit sluggish due to the weight. Oh... and the back seat is torture.
Hyundai i30 - Was a good car. Just not enough toys for the price. new Elantra is better. The 1.6 CRDi is truly economical, but the shifter is rubbery and the equipment underwhelming.
Chevrolet Aveo - No. Just... no. Terrible car. Terrible engine. Wait for the next one. If you really want a Chevy, buy the base model Cruze with the 1.8 MT. It's going to be more economical, and is much much more refined than the Aveo. Or... get the Spark... as it's incredibly economical.
BMW 116i - Not enough power for the weight. Drives like a go-kart... but it's a very, very heavy go-kart. Has the ride comfort of a go-kart, too. And the back seat sucks. At least the refinement and build are excellent.

There is that... and the Sentra GSX. Kinda old, but still value for money.
It's worth noting, though... that newer subcompacts have as much space as these two. ;)

Not just the engine. It's literally a D-Max with Mazda styling, but everything mechanical is Isuzu....
