Ease or difficulty of rooting depends on the model and firmware you have.
Some manufacturer's (eg Samsung) are easier to root than others (eg HTC).
But regardless of make and firmware version, the developer community eventuality comes up with a tool that will root your unit. :-)

Rooting allows you to install and use apps that require superuser rights. Examples of such applications are
- setcpu : app that allows you to over or under clock your processor
- titanium backup : backs up the state or your apps and many more

Rooting also allows you to install custom firmware just in case you're unhappy with the one that your phone's manufacturer offers.

Depending on the phone and the programs that are included. If it is the Galaxy S2, the answer is yes. BUT files only up to 4 GB, since they still use FAT 32.
