ag-laga ka ti manok ken baboy ....dadiay keh himayen ket igisa iti bawang ken bugguong tayo..digwan ti naglagaan..idilnak mon dadiay noodles mon aginggana maluto..digwan nu kayat..agkabil ka ti kolor ti atsuwete...
timplaan ti paminta ken bugguong nu kayat...ay..talaga nga agtidted ti buteg mo nga mangan....

breakfast yesterday morning...
i cracked open the freezer and took out 18 pieces of vigan longaniza from the bin. i store a dozen longaniza in individual sandwich bags for easier management.
my kids love vigan longaniza in a major way -- it must be my vigueño genes manifesting, hehe! we almost always have a cache of longaniza, shipped via partas waybill from vigan, in the freezer. btw, our longaniza is always derecado, no hamonado vigan "langonisa" for this family.
the hamonado longanisa we prefer is the baguio variety. we used to get from clavio's but since the clavio stall went defunct, we went to the neighboring one, alabanza's.
the longaniza cooking away. i won't post the finished product anymore-- baka adu manen it mabisinan!

yes, the characteristic taste of vigan longaniza is from the ilocano "suka", garlic, salt, peppercorns, achuete...
imo the ideal vigan longaniza should caramelized, not be overly sour, a bit salty and never sweet.
